Fryer cleaning
Each deep fryer is hygienically cleaned removing all built up carbons and debris. The
cleanser used for this process is F919 and is approved for use within the food processing industry. Remaining carbons are completely removed via a vacuum system before filtered oil is returned back to the unit.
Fryer Calibration
Each fryer unit is periodically tested for thermostat accuracy. Calibration is undertaken by correctly setting the temperature control or alternatively, marking the correct operating temperature for fried food (180ºC) on the thermostat.
Frying Charts
Each site is supplied with a FiltaFry Frying Chart to encourage good frying practice and procedures.
Assessing Suitability to Filter
Each operator will test the oil in every fryer prior to filtration to assess its suitability. An independent Inert Polar Compounds test is used to determine suitability for continuous use.
